Chateau Pavie Decesse
Up until 1855, Pavie and Pavie Decesse were one and the same vineyard. Then owner Ferdinand Bouffard separated the vineyards, with both properties ultimately ending up in the hands of the Perse family. Pavie-Decesse is located in the heart of the Côtes sub-district of St. Emilion, with the vineyards being planted on chalky, clay soils. Enjoying the same attention as Château Pavie, whose terroir it essentially shares, Pavie-Decesse achieves a consistency of quality which is the definition of a Great Growth. Pavie Decesse
is planted in 90% Merlot and 10% Cabernet Franc, the vine-age averaging 40
years-plus. The wines are lushly opulent and sensually textured.
Chateau Pavie Decesse 2003
This 9-acre vineyard, situated on the limestone plateau above Pavie, is planted with 90% Merlot and 10% Cabernet Franc. The average age of the vines is 43 years. Pavie-Decesse has become a limited production cuvee since part of the vineyard was incorporated into the larger Pavie site. Production currently averages around 400 cases, depending on the vintage. Pavie Decesse is vinified traditionally before being matured in 100% new oak barrels for 18 months. The wines are deep in color and concentrated and intense on the palate, with noticeable tannins and hints of vanilla. "Intense aromas of blackberry and raspberry. Full-bodied, with velvety tannins and lots of fruit. Big and juicy. Impressive. This is 90 percent Merlot and 10 percent Cabernet Franc. Very flamboyant. The Saint-Emilion and Saint-Emilion Grand Cru classifications are composed of 60% Merlot, 30% Cabernet Franc, 10% Cabernet Sauvignon and a small scattering of Malbec. The appellation is also surrounded by four "satellite" appellations, Montagne, Lussac, Puisseguin and St. Georges, which enjoy a family similarity but not the complexity of the best wines.
St Emilion was first officially classified in 1954 and is the most meritocratic classification system in Bordeaux, as it is regularly amended.
