Cosentino Winery made its first wines in 1980 with its inaugural vintage released in 1981 under the labels of Cosentino Wine Company and Crystal Valley Cellars. Cosentino's respect for traditional methods, such as punched cap fermentation, has resulted in a somewhat non-traditional approach. The first several wines produced and released by Cosentino in the early 1980s were made from small lots of grapes acquired from some of the leading growers of California's North Coast counties including Napa, Sonoma, Mendocino, Lake, and Sacramento Counties.

Very aromatic with spicy cherry, rhubarb, clove and cedar on the nose. Medium-full bodied, it expands on the mouth to a very complex wine with ripe pomegranate, cherries and blood orange flavors. Shows the nobility of structure of Cabs costing far more, with fine blackberry and black currant fruit and soft, dry tannins. A well balanced style with good tannin structure. Elegant and powerful, this tasty Cab will go with a wide range of cuisine.
