Dolin Vermouth
A historic vermouth brand, Dolin has been made to the same recipe in the Alpine hills around Chambéry since 1821, and was awarded the only Appellation d'Origine for vermouth in 1932. Dolin Vermouths are notably lighter, drier and less pungent than their larger commercial counterparts. The particular mixture of plants found near Chambéry give a fresh, restrained and elegant nose, with a subtle, complex bittersweet palate. Even the Blanc and Rouge retain great balance, with the sugar never cloying, and just enough bitterness to whet the appetite. Each can be enjoyed as aperitif on ice, with a twist of citrus, or in a broad array of traditional cocktails.

The practice of aromatizing wine dates back to the Ancient Greeks. This was formerly done to mask poor wine, or as later to add extra complexity to something already good. It also proved to be an effective form of early, homeopathic medicine. Right up until the 20th century, doctors regularly prescribed Vermouths and aromatized liqueurs for all manner of illness, and many people continue to take a glass per day for medicinal reasons.

Clear to slight yellowish hue. Desert wine like aroma – sweet with honey back drop. Botanical aromas although faint. A tasting a high quality “desert wine” – lush sweetness of honey fills the mouth. Botanical notes remain faint on the palate but there is a nice twinge of bitterness at the end. Production must occur in Chambey itself, real plants rather than pre-prepared infusions must be used during maceration, and sugar rather than other sweetening products must be used.

Fragrant Dolin vermouth from the Chambery region of France is an excellent dry vermouth. Vermouth is a civilizing influence. You can't, and shouldn't, make a proper martini without dry vermouth. Bright and crisp with a dry clean finish. Ideal in traditional cocktails. Considered the benchmark in fine French vermouth. Dry vermouth is also an wonderful addition to your cooking repertoire.

Dolin Rouge VermouthDolin Red Vermouth de Chambery
Dolin Rouge Vermouth de Chambéry is made of fine wines and botanicals found in the Alpine meadows above Chambéry. Together they impart a fresh and elegant nose, with a subtle and complex palate. Clear, dark copper, reddy-brown. Sarsaparilla and citrus zest nose with stewed fruits, quince, and Christmas spices (clove and cinnamon). Perfectly balanced, bitter-sweet sarsaparilla, herbaceous, citrus zest, prune/stewed fruit, quinine and cigar tobacco palate with light spice.

Vermouth was consumed as a medicinal libation until the later 19th century when it became an important ingredient in many of the first classic cocktails, such as the martini, the Manhattan, and the Negroni. In addition to being consumed as an aperitif or cocktail ingredient, vermouth is sometimes used as a substitute for white wine in cooking.
