Whilst Riesling enjoys a great status in
Europe, it is only recently that Americans have come to enjoy its racy
nature and fruity acidity, and truly appreciate its value at the dinner
table. The same is true with Rieslings' incredible affinity to cheese.
After an exhaustive session, we hand-picked the following cheeses to
complement our favorite Rieslings.
San Simon: Surrounded in the west and north by the Atlantic Ocean
and mountains from the Atlantic to the Mediterranean, Galicia has always
been a remote region of Spain. This isolation fostered an ancient cheese
culture. Here the Galacia cows graze on the lush green pastures and bear
milk that its people have been making into cheese for generations in the
town of Villalba. San Simon is aged 2-4 weeks, lightly pressed and then
gently smoked for 2 weeks after leaving the mold. Inside its red, polished
brown rind, San Simon has a creamy, buttery, smoky flavor that ranges from
mild to piquant.
Matured to perfection, Cave Aged Emmental is a special taste
experience! Unlike traditional Emmental (also known as Swiss Cheese), this
one has a dark brown rind and a unique, nutty, full-flavored taste. It is
manufactured by Emmi, master cheesemakers since 1782. Made in massive 200
pound wheels from pure, unpasteurized cow's milk, this special "Swiss" is
aged for at least 12 months in sandstone caves deep below the Santenberg
in the Canton of Lucerne. Using ancient techniques, a constant temperature
and humidity can be achieved in the caves all year round, ensuring perfect
development of every cheese Emmi produces.
A fresh sheep's milk product from Sardinia, Muravera is
Sardoformaggi's signature cheese. Soft in texture with a slightly tangy,
lemony flavor, this cheese is best served with the meal, either before as
an hors d'oeuvre, or after as part of a dessert course. It comes from
mountainous northern Sardinia, which is an important fact because the
southern part of the island gets very little rainfall, resulting in dry
grasses for grazing and thus, less flavorful cheeses.
