fortified wine, is generally characterized as sweet, grapey and rich.
There are three basic types - ruby, tawny and white, but the wine's final
character depends on whether it reaches maturity in bottle or cask. It was
the British merchants of the 17th and 18th centuries who helped transform
Port (or Porto as the Portuguese call it) into one of the world's finest
of wine selections.
Mature English Cheddar by Coombe Farm: The authentic English
Cheddar produced on Coombe Farm by master cheesemaker Martyn Gosney is
made from rich, local milk and aged for over 12 months in temperature
controlled storage units. We find it to be of excellent quality,
possessing all the great traits we've come to expect in a good cheddar -
sharp, nutty and not overly dry.
Cabrales, from Spain, is sharp and tangy, and even more so when
made with mixed milks. Like Gorgonzola and Roquefort, it is a famous blue
cheese whose name is often copied by inferior wannabees.
Long known as "The King of Cheeses", Blue Stilton is one a handful
of British cheeses granted the status of a "protected designation origin"
(PDO) by the European Commission.
Agour Ossau-Iraty: Amidst the gorgeous rolling mountains of the
Pyrenees, the natural geographic border dividing France and Spain, lie
vast pastures providing fertile grazing for milk-giving sheep. It is from
this unpasteurized milk that the Agour company, a family company steeped
in tradition, creates this magnificent cheese.

Port is the world's greatest fortified wine, produced in the
valley of the Duoro River, East of Oporto in Northern Portugal. Port falls into
two broad categories: ruby ports, characterized by intense, red fruit and berry
flavors; and tawny ports, distinguished by their mellow, nutty, butterscotch and
caramel essences. We have selected four cheeses that will complement both types.
