outsmarting Wine
The dirty little secret of wine appreciation is that there's just
not that much to it. |

Previously featured wines:
Dehlinger, California, 2002 Estate Chardonnay
La Braccesca, Italy, 1999 Nobile di Montepulciano
The Colonial Estate, Australia, 2003 Explorateur Shiraz
Perrin, France, 2002 Chateauneuf du Pape Les Sinards
When the Papacy was established in Avignon in the 14th Century,
Châteauneuf-du-Pape was selected to be the Pope’s summer residence. The seven
successive Popes encouraged the wine production and the expanding of the
vineyards. The strict way in which wine has been produced has remained a
constant factor throughout the history of these vineyards
Whitehaven, New Zealand, 2002 Marlborough Pinot Noir
A full-bodied wine with a soft, velvet texture, supporting dark fruit flavours
and a firm, lingering finish. During the fermentation, the vats were hand
plunged three times daily to ensure maximum extraction of colour and flavour,
with fermentation temperature peaking at 32 degrees c. The wine was lightly
pressed immediately after ferment, and racked to French oak barriques for 10
months ageing. During this period the wine was regularly stirred on light yeast
lees, and full malolactic fermentation occurred. Before bottling, the wine was
fined with egg whites to ensure a soft finish. |
