Madeira is a fortified wine. Madeiras from Portugal are considered to be far superior to domestic brands. Different grape varieties are used to make the four types, which range from dry to sweet. Varieties of Madeira (in order from driest to sweetest) include the Sercial Madeira, Rainwater Madeira, Verdelho Madeira, Bual Madeira = Boal Madeira, and Malvasia Madeira = Malmsey Madeira. It can be served chilled and drunk as an aperitif, but is also used extensively in cooking in the same way as you would dry sherry.
