Chardonnay
Chardonnay became very fashionable in the 1990's, as the stereotypical drink of young urban women of the Bridget Jones generation. But as vineyards responded with massive new plantings of the variety, they found that fashions were changing again. In the Chablis region of France, it is the only grape permitted and it renders a "crisp, flinty" wine. California winemakers have developed a style of Chardonnay which resonates with market dynamics and fulfils all demands for richness, texture, and complexity - those characteristics which had previously typified white Burgundy.
Smoked salmon
Smoked salmon is popular ingredient in canapés, often combined with cream cheese and lemon juice, or 'bulked out' with other fish.
In America, smoked salmon is normally sliced very thinly and is often served on bagels with cream cheese, or on Melba toast with sliced red onion, lemon and capers.
